Chocolate Birthday Cupcakes

I baked these yummy chocolate cupcakes for my friends birthday . Before we went out and celebrated at the bars, we are some of these chocolately delights. And there were a hit! Once again, Martha knows how to work her magic… I used some store-bought funfetti frosting since that’s what the birthday girl wanted. Here’s the recipe.

Easy Chocolate cupcakes

Serves 12

3/4 cup unsweetened cocoa powder

3/4 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup (1 1/2 sticks) unsalted butter, room temperature

1 cup sugar

3 large eggs

1 teaspoon pure vanilla extract

1/2 cup sour cream (I used buttermilk, which made it a tad bit more dense)

Preheat oven to 350 degrees. In a medium bowl, sift together cocoa, flour, baking powder, and salt; set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then beat in vanilla. Reduce speed to low. Add the flour mixture alternating with buttermilk, starting and ending with the flour mixture. Divide batter among muffin cups, filling about 3/4 of the cup. Bake until toothpick inserted in center comes out clean, about 20-25 minutes. Cool & enjoy!
