Peppermint Bark cookie- Tis the season

This is the quintessential cookie for the holiday season. The pieces of peppermint bark mixed in with the soft and crispy edges will make you wish that the holiday season would never end.

I found them at 101 Cookbooks, a great resource for recipes that focus on enhancing natural ingredients. I bought the peppermint bark from good ole Trader Joe’s and literally had to lock the bark up because it was so addicting.

The bark adds a nice bite to the cookie, and gives great texture to the overall yummy cookie. I made some enhancements though. I only used 3/4 tablespoon of vanilla extract because the full tablespoon seemed a bit much. And I also added some more decadence: Ghiradelli’s bittersweet chocolate chips. I just love adding more chocolate to things. No harm, right? They can do no wrong…

Depending on the size you make them into, the recipe makes a ton of cookies, plenty for friends and family. And yourself. And the peppermint smells that fill your kitchen will tempt you to devour these cookies. in one sitting. No joke.
